Canapés

Smoked salmon, crusty bread, horseradish sour cream, roe, fennel

Plated scallops, truffle butter, pastis flambé pineapple, lobster bisque

Fish tartare in glass, lime, feijoa, jalapenos, capers, coriander, coconut

Pulled pork skewer on crusty skin, pomegranate sauce, lemon balm jelly

Entrées

Half duck breast cooked, 13 spice citrus butter, apple sauce, carrot puree

Baby octopus, burnt capsicum, creamy polenta, steamed leek, lemon sauce

Crab rillette, ginger mayo, tomato coulis flavored with lemon balm and ginger

Red onion and beetroot Tatin, mesclun salad, raspberry vinegar, balsamic cream

Mains

Young snapper glazed in beef jus, apple sauce, gourmet potato, red cabbage 

Beef eye fillet seared in sage butter, 12 spice orange sauce, potato puree, truffle salt

Pork fillet medallions, blackcurrant and prune sauce, corn mousse, pickled vegetables

Chicken roulade filled with duck cooked in wine and bacon, brie sauce and potato puree

Desserts 

Salted butter biscuit, passion fruit cream, ginger cream, fresh mango and pineapple, mint

Basil mint & lemon thyme flavoured crème brûlée, topped with rosemary smoked caramel

Rhubarb apple and pear crumble stewed in a cherry & blackcurrant coulis, whipped cream

Tarte Tatin, stewed apple, salted butter caramel and lemon jus, flaky pastry, whipped cream
